Located on Great Exuma island, the largest island of the 350 Exuma island chain, Palm Bay Beach Club hotel and resort is just seven miles from Exuma International Airport, one mile from the capital, George Town, and a short drive to the new Four Seasons Greg Norman Signature Golf Course. TWO TURTLES INN

This non-descript collection of wooden tables and chairs, and a small bar decorated with license plates, plays host to nightly party-goers and casual diners. Locals and visitors frequent the establishment for all the Bahamian staples: grouper, conch, wahoo and lobster depending on the season. At the Friday-night barbecue. Go native with the grilled grouper for $18, served with peas and rice (as is almost everything you eat in the Bahamas), macaroni and cheese, cole slaw and potato salad. Don't worry about the pounds, because at 8 o'clock or thereabouts the band starts playing its mix of calypso, rock, reggae, soul and whatever else it can think of, the amps loud enough to wake the dead and set the most leaden feet to twitching. Ask someone how to do the Bahamian shuffle. Don't be shy; the Bahamians won't. You'll also find burgers and a few other meat dishes on the limited menu. Usually, the food plays a secondary role to rum drinks and beers at night. The barbecues and live music at the inn's courtyard every Tuesday and Friday night always attract the crowds. It lies across from the Peace and Plenty Resort. The Friday night Bar-b-Que features Ribs with peas & rice, slaw and Mac 'n Cheese for $12 plus great Lemon Meringue pie for $4. LA SHANTE

La Shante in George Town is a casual place, serving sandwiches, burgers, conch fritters, grouper fingers and other Bahamian dishes. Open daily noon until late. A delicious lunch is served daily and includes a menu of seafood, sandwiches and appetizers. Guests can also enjoy breakfast and dinner upon request. SAM'S PLACE

If Bogie were alive today, he'd surely head for this laid-back second-floor restaurant and bar overlooking the harbor in George Town. Sam Gray, the owner, offers breakfasts to catch the early boating crowd. Lunches could include everything from freshly made conch chowder to curry chicken. You'll also be able to order an array of sandwiches throughout the day. The dinner menu changes daily, but you're likely to find such well-prepared main courses as Exuma lobster tail, roast lamb, and Bahamian pan-fried grouper. At dinner, the talk here is of one of everybody's dreams -- owning a private utopia, one of those uninhabited cays still remaining in the Exuma chain. The Sand Bar just outside of town (located at The Coconut Cove hotel) is a great place to grab a cool drink or colorful cocktail to watch the sun go down.Our Coconut Cove Chef prepares special gourmet selections for breakfast and dinner. Special cuisine may be ordered by request and can be prepared according to your specifications. Some say it has the best pizza in the tropics, too. Dietetic foods are also available upon request. THE TOWN CAFE AND BAKERY

Towne Cafe, in the Marshall Complex (tel. 242/336-2194), serves one of the best breakfasts in George Town. It's really the town bakery. Drop in any day but Sunday for a lunch of local Exumian specialties such as stewed grouper or chicken souse or a sandwich. The Town Cafe and Bakery is a favorite place to grab breakfast, offering freshly baked doughnuts and muffins. Later in the day, you'll find boiled fish, chicken souse and johnnycake. 242-336-2194. Kermit's Hilltop Tavern in Rolleville is a bar and restaurant serving local delicacies including fried grouper, minced lobster, conch, curried mutton and even fresh fruit from Kermit's own farm. 242-345-6006.

THE SAMPSON CAY CLUB

Each night the restaurant offers a fun and casual atmosphere, with mouthwatering delicasies. The abundant local fish and shellfish dominate the menu, and are complemented by succulent American steak and some poultry dishes. Taste the authentic island cuisine; delicious Conch Salad and Cracked Conch are among the best in the islands. And don't forget the fresh baked Bahama bread. There is even a kids menu and also traditional American classics as well. There are a wide selection of excellent wines, over a dozen different beers, and almost any liquor you could wish are available, fresh water, iced tea, juice, and common sodas. Schools of colorful tin fish adorn the walls, competing with the gorgeous blue water and the yachts in the marina for your attention

Big Pig Roast: A new tradition at KB's Chat n' Chill, near the Hurricane Holes on Stocking Island. You need a boat ride to get there, so check at your hotel or at Starfish to arrange transportation. Sunday afternoons.

JEAN'S DOG HOUSE

A former school bus was recycled and turned into Jean's Dog House along Queen's Highway in George Town. Here you'll find the island's best lobster burger in a cramped but spotless kitchen on wheels. Instead of eating in the hotel dining room, we like to go here for breakfast and order the "MacJean," a robust sandwich with sausage or bacon, plus cheese, on freshly baked bread. Of course, she's also noted for her "dogs," or frankfurters. The owner is a well-loved personality known only as Jean. Visit her only from 7am to 3pm, and don't bother bringing your credit card.

BIG D'S CONCH SPOT

The best conch salad is found at Big D's Conch Spot No. 2, Government Dock (tel. 242/358-0059). "Fresh, sexy conch," as it's called here, is served daily. They'll make it right in front of you, so you know what's going into your salad. They're open Tuesday to Sunday noon to 1am. Reservations are requested.

CASTAWAYS

IL CIELA AT THE FOUR SEASONS at EMERALD BAY

The enchanting Bahamian ambience of Il Cielo is accentuated by floor-to-ceiling glass panels and screens to create a light and airy dining experience, backdropped by views over the pools and the ocean. A mile or so south of George Town you should try Cheater's Restaurant. Chef-owner Justin Cheater serves dynamite Cracked Conch and local Cracked Lobster. Least you are disturbed by the name, it's just the way his team mates spelled the word "cheetah" when the owner-chef was a speedy track star. They have great Cracked Conch and Fried Chicken. 2 miles south of town.
